  • 150g plain flour
  • 2 tsp baking powder
  • 1 ½ tsp cinnamon
  • ½ tsp salt
  • 2 eggs
  • 150ml oil
  • 100g brown sugar
  • 1 tsp vanilla bean paste
  • 180g carrots, shredded


  • 85g butter
  • 175g cream cheese
  • 135g powdered sugar, sifted
  • 1 tsp vanilla bean paste


  1. Preheat oven to 175degrees. Line a our Robert Gordon ‘feast’ loaf pan with parchment paper with an overhang on the sides to easily lift the Carrot Cake Loaf out of the pan after baking. Set aside.
  2. Combine flour, baking powder, cinnamon and salt in a small bowl. Set aside.
  3. In a large bowl whisk together eggs, oil, sugar and vanilla until combined. Add dry ingredients and stir to combine. Stir in carrots just until combined. Transfer batter to the prepared loaf pan and bake for about 35-40 minutes or until a toothpick in the centre comes out clean. Don’t over bake. Remove cake from the oven and cool in the pan for about 10 minutes. Lift out the pan and transfer to a wire rack to cool completely.
  4. Meanwhile, make the Cream Chees Frosting. Therefore, mix butter with a handheld or stand mixer fitted with a whisk or until smooth and combine for about 1 minute. Spread cream cheese frosting on top of cooled carrot cake and sprinkle with nuts if desired. Store in an airtight container in the refrigerator up to 3 days.
